Pudding of rice Vialone with strawberry sauce

Pudding of Rice Vialone Nano Veronese i.g.p.
75 cl of whole milk
100 g of sugar
60 g of butter
180 g of rice Vialone Nano Veronese i.g.p.
160 g of cream
Zest of a lemon
250 g of cream
12 g of gelatin
200 g of fresh strawberries
3 g of salt
Pudding of rise Vialone Nano Veronese i.g.p.
Boil the milk with the lemon zest, sugar and butter, then remove the zest, add the rise Vialone Nano Veronese, cover it and cook on very low heat until the milk completely evaporate. Let the rice cool, then join the whipped cream and custard in which has been previously dissolved the gelatine, mix and pour into one portion molds and let cool for at least 2 hours.
Blend the strawberries with salt and strain through a sieve.
Serve the pudding of rice Vialone Nano Veronese with strawberry coulis.
