Orange pastry roll with mousse of Asiago cheese and walnuts

Recipe ingredients:

Pastry roll
250 g flour 00
250 g semolina
250 g orange juice
100 g cornstarch

Mousse
500 g of fresh cream
200 g of Asiago cheese
80 g of albumen

Salt to taste

Finishing
4 walnut kernels

Preparation:

Pastry roll
Mix up all ingredients and let the dough rest for about 30 minutes. Roll the dough thinly and make discs of 5 cm diameter. Wrap around a cylinder for a pastry roll and bake at 180 ° C for about 5 minutes.

Mouse
Bring to boil the fresh cream, at 40 ° C add the grated Asiago cheese and whisk well, then filter the mixture and add the albumens. Pour into a siphon with a nitrogen charge

Presentation:

Fill the pastry roll with the mousse of Asiago cheese and garnish with walnuts.
