Gelatine of 4 Luppoli Premium Lager, sardines and eggplants

4 Luppoli Lager.

Recipe ingredients:

(for 4 people)

Lemon Syrup
25 g of sugar
25 g of water
Juice of one lemon
Zest of ½ lemon

Gelatine of 4 Luppoli Premium Lager
85 g of 4 Luppoli Premium Lager
15 g of lemon syrup
Half sheet of gelatine

Sardine mousse
135 g of sardines mashed with extra virgin olive oil
250 g water
7 g of gelatin (2 sheets)
100 g of extra virgin olive oil
1 / 4 of lemon juice

Fried Red Round Eggplant d.o.p.
200 g of Red Round Eggplant d.o.p.
Oil for frying q.b.

Preparation:

Lemon Syrup
Mix all ingredients and bring to boil, cool and filter.

Gelatine of 4 Luppoli Premium Lager
Soften the gelatin in cold water, squeeze and dissolve in very hot water, then add it to the 4 Luppoli Premium Lager with the remaining lemon syrup and mix.

Sardine mousse
Mix the ingredients with the help of a cutter and place all in a siphon loaded with two cartridges

Eggplant with Red Round d.o.p. fries
Cut the eggplant into thin slices, then dried in the oven and then fry them

 

Presentation:

Place in a small beer glass a third part of gelatin of 4 Luppoli Premium Lager, add the sardines foam and serve fried eggplant separately.
