Parfait of pecorino cheese of Tuscany with orange honey

Recipe ingredients:

(for 4 people)
80 g of pecorino cheese of Tuscany
200 g of Meringue
350 g of fresh cream
50 g of sugar
2 egg yolks
6 sheets of gelatin
50 g of white chocolate
30 g of dark chocolate
40 g of orange honey

Preparation:

In a bowl egg yolks and sugar and whip them bringing to 82°, then add the gelatin (previously dissolved in the microwave) and grated Pecorino of Tuscany, after that add the meringue with glossy whipped cream and mix together with a motion from top to bottom.
Brush molds with melted white chocolate, put them in the fridge to cool down and repeat the process at least two more times and then brush them with melted dark chocolate.
Fill the molds with the mixture of parfait and place in the freezer for about an hour.

Presentation:

Place the parfait on plate and garnish with orange honey.
