Flan of Bitto d.o.p., broccoli cream and bacon chips
6 Luppoli Bock Rossa.
(for 8 people)
500 g of whole milk
500 g of cream
40 g of wheat flour type 00
30 g of butter
500 g of Bitto d.o.p. 1 year old
Extra virgin olive oil to taste
Salt to taste
Thin slices of bacon to taste
Boil the milk and cream, melt butter, add flour and cook for 2 minutes, mixing well. Add the chopped small pieces of Bitto d.o.p., when the mixture has cooled, add the eggs, then pour into buttered mono-portion mold and bake at 110° C for 25 minutes.
Cook broccoli in boiling salted water for about 7 minutes, then blend adding extra virgin olive oil and salt.
Bake the bacon slices at 140° for 15 minutes.
Pour the broccoli cream into a soup plate, top with the flan and garnish with bacon chips.
