Recipe ingredients:
(for 4 people)
Pasta:
250g of flour
60 g of semolina
2 egg yolks
3 eggs
Sauce:
200 g of seasoned bacon
150 g of white onion
50 g of grated pecorino romano cheese
Black pepper
Preparation:
Mix all ingredients and work energetically
Obtaina a smooth and firmly dough
Let stand 10 minutes
Roll out the dough and get the macaroni with additional tool called "guitar"
Cut the bacon into strips
Sauté in a pan
Add the chopped onion and cook for 10 minutes
Boil a pot of salted water
Cook the macaroni
Flavour them in a pan with the bacon and stewed onion
Presentation:
Stir in the cheese and the black pepper coarsely grounded and obtain a creamy sauce with a little cooking water
Serve in individual plates
