Speck dumplings with Porcini mushroom consommé

                Recipe ingredients:
(for 4 people)South Tyrolean Speck dumplings i.g.p.
100 g of South Tyrolean Speck i.g.p. cut into cubes
150 g of white bread cut into cubes
50 g of wheat flour type 00
50 g of stewed onions
3 eggs
Chives to taste.
Salt to taste.
Porcini mushroom consommé
1 liter of cold water
two carrots
A stalk of celery
an onion
Half leek
100 g of dried porcini mushrooms
Preparation:
South Tyrolean Speck dumplings i.g.p.
Mix the bread with the South Tyrolean Speck, flour, onions, salt and chives, then add the eggs and stir the mixture until a smoothy, after that model to obtain dumplings, to be cooked then in salted water for 7-8 minutes.
Porcini mushroom consommé
Boil ingredients for 20 minutes and then filter
Presentation:
Serve the dumplings in a pot with porcini mushroom consommé.
